Creamy Chicken with Mushrooms

Don’t be too impressed. It was really too easy. I got the recipe from RealSimple, another shocker, I know.  I put chicken cutlets, seasoned with salt and pepper, on the stovetop and covered them with olive oil-and probably used a little too much, lesson for next time. Then I did the same thing with the mushrooms until they were golden brown and stirred in heavy cream and goat cheese. Again, too easy, but nothing beats a working night at home with a quick meal you cooked yourself.

I could really do this more often.
