Food just seems to taste better when you cook it and eat it with friends. Lucy and Eliza came over last night for some pasta, fresh veggies, and good wine.
I provided the fettuccine, complete with goat cheese and olive oil from the Mason’s house across the street, wine, and eggplant. Eliza brought the bread and more wine. And Lucy Goosey brought fresh okra, beans, and salad goods-including avocado (yum!). And a bottle of wine.
I’ve never cooked eggplant before, but it was pretty simple. I sliced it and then chopped it, sauteing the eggplant in olive oil and seasoning it with salt. Mixed in with the noodles and goat cheese, the eggplant made for a smooth contrast.
Lucy’s yummy veggies, Eliza’s fancy bread, and a bottle of pinot noir (2008-Kingston Family Vinyards-Casablanca Valley, Chile-Tobiano) made for a scrumptious feast shared with the best girlfriends that anyone could ever ask for. I am beyond blessed.
Before Eliza’s homemade cookies got us through the horrific season premiere of “Weeds”, we laughed our way through the last 15 minutes of the 2nd “Twilight” movie which truly just made the night all the more…um…memorable.
Next time, I want to try Grilled Portobello Quesadillas with Flakey Tomato and Mozzarella Tarts. But I need a food processor first. Anyone want to let me borrow one? (Hint, Hint, Mom…)
